Story of Premium Ceremonial Matcha SEI-FU

SEI-FU (清風) is a premium ceremonial grade matcha from Gokashō in Uji, Japan. This stone-ground matcha blends Asahi, Gokou, Okumidori, and Yabukita cultivars.

The combination creates a rich, smooth profile with distinctive savoury character and fresh, tender harvest notes. Asahi provides deep umami and creamy mouthfeel, Gokou adds floral and fruity notes, Okumidori contributes vibrant colour and mild sweetness, while Yabukita balances with refreshing umami and light astringency.

Brewing Instructions

Koicha preparation:

  1. Warm the bowl with hot water, then empty and dry
  2. Sift 4g of matcha into the warmed bowl
  3. Add 40ml of 70-80°C water
  4. Knead slowly with a bamboo whisk until the mixture becomes a smooth, thick paste
  5. Drink immediately in small sips

Usucha preparation:

  1. Warm the bowl with hot water, then empty and dry
  2. Sift 2g of matcha into the warmed bowl
  3. Add 20ml of 80°C water and knead into a paste using a bamboo whisk
  4. Add 50ml more water and whisk in a "W" motion until a fine layer of froth forms
  5. Drink immediately

Cold brew preparation:

  1. Sift 2g of matcha into a shaker with 250ml of water
  2. Add sweetener if desired and shake well
  3. Pour over ice and serve

Premium matcha latte preparation:

  1. Sift 2-3g of matcha into a mug
  2. Add 20ml of 80°C water and whisk until smooth
  3. Steam 150-200ml of milk or soy milk
  4. Pour the steamed milk into the matcha paste
  5. Optional: add sweetener to taste

Storage For best freshness, store away from strong odours in the refrigerator. If needed, place the matcha can in an additional sealed bag for extra protection.
