Story of Ceremonial Matcha HIJIRI-NO-SATO

HIJIRI-NO-SATO (聖の里) is a ceremonial grade matcha from Uji, Japan. This stone-ground matcha blends Yabukita, Okumidori, and Gokou cultivars.

The combination creates a smooth, well-balanced profile with pleasant umami and acceptable bitterness in the finish. Yabukita provides brightness, Okumidori adds richness and colour, while Gokou contributes floral notes and umami depth.

Brewing Instructions

Usucha preparation:

  1. Warm the bowl with hot water, then empty and dry
  2. Sift 2g of matcha into the warmed bowl
  3. Add 20ml of 80°C water and knead into a paste using a bamboo whisk
  4. Add 50ml more water and whisk in a "W" motion until a fine layer of froth forms
  5. Drink immediately

Cold brew preparation:

  1. Sift 2g of matcha into a shaker with 250ml of water
  2. Add sweetener if desired and shake well
  3. Pour over ice and serve

Matcha latte preparation:

  1. Sift 2-3g of matcha into a mug
  2. Add 20ml of 80°C water and whisk until smooth
  3. Steam 150-200ml of milk or soy milk
  4. Pour the steamed milk into the matcha paste
  5. Optional: add sweetener to taste

Storage: For best freshness, store away from strong odours in the refrigerator. If needed, place the matcha can in an additional sealed bag for extra protection.
